Food Truck in Mall Parking Lot? An Interesting Real Estate Business Model

Here’s a shot from the TV series, The Outsider on Prime (https://en.wikipedia.org/wiki/The_Outsider_(miniseries)) of a food truck in a mall parking lot.

There’s a real estate business model in this:

a) secure longterm land leases for your food trucks in mall parking lots,

b) offer great food including home delivery and business catering from your “commercial kitchens,”

c) offer seating that is covered so customers have shade when they need it and some protection from the elements; and don’t forget to add some dwarf (potted) evergreens for beauty as well as minimizing wind speeds and dampening noise,

d) add some playful elements like say a cornhole game, a three-hole mini golf and an outdoor ping pong table…

e) note how this food truck appears to be double-loaded: It can serve as a drive-thru and also serve from the other side for “seated” customers.
